Fresh Salmon and Slaw

This fresh recipe is the perfect way to celebrate spring.

Method:

Salmon and Cucumber Slaw

Ingredients:

  • 4 6oz Salmon filets (pan seared)
  • Salt and pepper to taste
  • ¼ c rice vinegar
  • ¼ c sugar
  • 2 t sesame oil
  • 1 T sesame seeds
  • 1 each cucumber
  • 1 each red bell pepper

Method:

Combine the vinegar, sugar, sesame oil, and sesame seeds in a bowl and whisk until the sugar is dissolved.

Add thinly sliced cucumber, seeds removed and thinly sliced bell pepper.

Let stand for 5 minutes and serve.
